Crawford River Cabernet Sauvignon 2019 Black-Friday “This Ensamble is made usingHand picked and destemmed only. Each parcel was fermented in open vessels and hand plunged throughout a moderate temperature fermentation. One parcel was left on skins after completion of fermentation for 12 weeks in order to lengthen tannins and add complexity. All parcels were settled for around 4 weeks in tank prior to barrelling down. The wine then spent 22 months in French Oak prior to blending and bottling in September 2021. Diam closure.
